템퍼링이 완료된 초콜릿을 호두 모양이나 원형 몰드를 이용하여 쉘과 코어를 동시에 충진하고, 바이브레이터를 사용하여 호두초콜릿 내의 공기 방울을 제거하는 성형 공정;
상기 호두 모양 몰드에 충진한 초콜릿을 냉각터널 내부온도를 5~10℃에서 20~40분 냉각하는 냉각 공정; 및
상기 냉각 공정 후 숙성실에서 7일 내지 10일 숙성시켜 조직이 안정한 상태로 되게 하는 숙성 공정을 포함하고,
상기 호두초콜릿은 쉘; 및
상기 쉘 내측에 수용되는 코어를 포함하되,
