Abstract

PURPOSE: Provided are a method for processing squids and a processed product thereof which has the taste and flavor peculiar to the squid and tenderized meat. CONSTITUTION: A method for processing squids comprises the steps of: trimming and washing a squid; parboiling the squid in salt water boiled at 80-90 deg.C, followed by washing at fresh water of 10 deg.C; seasoning the squid with seasoning sauce; drying the seasoned squid in a drier to 30% of moisture content; and vacuum-packing the dried squid and sterilizing the pack thereof in boiled water at 80-100 deg.C for 7-15 minutes.
