摂取前、及び摂取15、30、45、60、90、120、180分後に採血し、血中アミノ酸濃度及び血清インスリン濃度を測定した。測定した血中アミノ酸濃度の変化量を図1に示し、血中BCAA濃度の変化量を図2に示す。また、血清インスリン濃度の変化を図3に示す。図1及び図2から、摂取後45分で血中アミノ酸濃度及び血中BCAA濃度がピーク変化値を示した。これらの結果は、ゲル状食品組成物を摂取することによる吸収の速さ及血中濃度の立ち上がりの速さを示唆している。さらに図3に示されるように、当該ゲル状食品組成物の摂取により、タンパク質合成刺激作用を有するインスリンの分泌が促進されており、体内のタンパク質代謝はタンパク質の同化に傾くことが示唆された。
