Abstract

PURPOSE:To prepare the title pigment of an orange to red or blue to purple color suitable for coloring carbonated drinks, syrups, jams, frozen desserts, etc., by recovering a pigment component from an extract of pods of Tutankhamen peas with a solvent such as water and/or a lower alcohol. CONSTITUTION:Fresh or dried pods of Tutankhamen peas are dipped in 1-100ml, per g of the pods, of a solvent selected from among water, lower alcohols (e.g., methanol) and mixtures thereof, to which an acid such as hydrochloric acid may be added to adjust the pH of the solvent to 1-5, if necessary. With continuous or intermittent stirring, extraction is effected at a temp. of room temp. - 60 deg.C several hr to several days. The resulting extract is dried, e.g., under reduced pressure to remove the solvent therefrom. The residue is washed with ether, dried, dissolved in methanol acidified with hydrochloric acid, etc., and admixed with ether to precipitate a crude pigment, which is then separated by filtration, dried, admixed with a small amt. of a cold lower alcohol, and dried under reduced pressure to prepare the title pigment purified and having a blue to purple color in the case of fresh pods or an orange to red color in the case of dried pods.
