Abstract

PURPOSE:To produce an unsaturated aldehyde enzymatically through a shortened and simplified process of high safety, by allowing a crude enzyme solution prepared from a sea algae to act on the corresponding carboxylic acid. CONSTITUTION:An unsaturated fatty acid is allowed to react with a crude enzyme solution or a powder containing the same prepared from a sea algae to produce an unsaturated aldehyde which has the same chemical structure as of the substrate, but has a 1 less carbon number than the substrate on the carboxyl side. The reaction is preferably carried out at 20-35 deg.C for 1-2hr. The pH of the reaction mixture is preferably in the neutral zone.
