Abstract

PURPOSE:To obtain a palatinose condensate suitable for a non-cariogenic millet jelly substitute, by heating and concentrating an acidic aq. soln. of palatinose. CONSTITUTION:A palatinose condensate consisting of 2-6 palatinose units is obtd. by heating and concentrating an aq. soln. of palatinose whose pH is about 3.2-5.8 at liq. temp. up to about 105-170 deg.C. It is preferable that said heating and concentration is carried out under a pressure of about 110mmHg (abs. pressure) up to the liq. temp. of about 105-160 deg.C for depressing occurrence of a decomposition product.
