Abstract

PURPOSE:To obtain a releasing oil for food exhibiting excellent releasing effect without compounding starch liable to deteriorate the taste of foods, by compounding an oil and fat with lecithin together with gummy matter at specific ratios. CONSTITUTION:The objective releasing oil contains oil and fat, gummy matter and lecithin. The amounts of the gummy matter and the lecithin are 1-20wt.% and 0.5-15wt.% based on the sum of the components, respectively. The oil and fat used in the above composition is preferably those containing a triglyceride wherein the carbon number of fatty acid group is 4-12. Among the above oil and fat, a mixture containing 20-95wt.% of a triglyceride having 14-24C fatty acid group and 5-80wt.% of a 4-12C fatty acid group is preferable. The gummy matter is guar gum, xanthan gum, arabic gum, etc., and above all, guar gum and xanthan gum are preferable from the viewpoint of releasability and taste.
