Abstract

PURPOSE:To easily shorten the astringency removal period of persimmon at a low cost without using particular facility, by carrying out the astringency removal of persimmon with an alcohol in a container in the presence of a heat-generation material. CONSTITUTION:Astringency is removed from a persimmon in a container with an alcohol in the presence of a heat-generation material. The alcohol used in the above process is preferably hydrated ethyl alcohol having a concentration of 20-60%, denaturated alcohol, anhydrous alcohol or adsorbed alcohol. The amount of the alcohol is usually 20-60ml (in terms of pure alcohol) per 15kg of astringent persimmon. The container is conventional corrugated board box, wooden box, plastic container, etc. The heat-generation material is e.g. those composed mainly of oxidizable metal powder and a water-retaining material holding an aqueous solution of an oxidizing catalyst.
