Abstract

PURPOSE: To provide snack chips basically consisting of cereals which contain respectively prescribed weight% of cereal materials, fats and oils, water and emulsifiers and are lower in the contents of the fats and oils and higher in the content of fibers than the traditional snack chips. CONSTITUTION: These extrusion cooked snack chips contain 65 to 90wt.% cereal materials, 10 to 35wt.%, more preferably 15 to 25wt.% fats and oils, 0.2 to 3.0wt.% water and <=1wt.% emulsifiers. The cereal materials subjected to the extrusion cooking time and temp. sufficient for imparting >=60%, more particularly >=80wt.% gelatinization of starch are used. The emulsifiers are the emulsifiers selected from distilled mono- and diglycerides, succinylated monoglyceride, etc., and a mixture composed thereof. These snack chips are the original and unique snack chips which are crispy and crunchy but have light texture.
