成る加工食品の製造方法を提供しようとするもの
である。

等の生鮮肉類1を、水2とともに型3に入れ一体
的に凍結させ、第2図のような原料ブロツク4を
製造する。なお水2は生鮮肉類1を固着一体化さ
せ、かつ原料ブロツクを所定の形状に成型するた
めのものであるから、生鮮肉類が非常に軟弱で自
重により型に合わせて変形しかつ表面に付着水分
が存在するような場合には、別に加える必要はな
い。次いで、この原料ブロツク4を低温状態に保
ちながら、スライス装置にかける。スライス装置
は第3図に例示するように鉋台(図示せず)に固
定したナイフ5と、加圧ボデイ6に固定した口金
7とを備えており、原料ブロツク4を上方から加
圧しながら、矢符方向に往復させれば、ナイフ5
と口金7の協動作用により、原料ブロツク4のナ
イフ5に接する部分は薄肉に切削され、かき氷状
になつて落下する。従つて、これを寄せ集め、解
凍して水切り、乾燥を行なえば薄く切削された食
品原料が得られる。なお、スライス装置の把持部
に把持されて切削できずに残つたブロツクは、新
しい生鮮肉類とともに再凍結して新なブロツクと
され、再度スライス装置にかけてスライスされ
