手かえし作用を受ける。餅が杵受体、回転筒およ
び臼底側壁上に亘つて載置されている場合におい
ては、餅塊は三つの異なる方向の作用を受けて剪
断および捻り作用を受けて練られ、又は複雑な運
動外力を与えられて均等練り作用を受けるなど、
前記従来の臼を改良したものである。尚、臼を適
度に回転すれば前記作用に回転力を積極的に付与
することができる。

する。図中12は有底支持筒11の底板へ縦に螺
合した調節ボルトであつて、杵受体4はキー13
により有底支持筒へ回転を拘束されている。前記
臼体1の外側は内外二重壁1a,1bにより構成
され、二重壁間には冷却水を入れてある。また臼
体1の下部外側にギヤー14を固定し、ギヤー1
4に咬み合うギヤー15をモーター16の軸に固
定してある。前記実施例において、ボルト12を
回転すると、ボルト12の昇降につれて杵受体4
を昇降させその上端面の位置を調節することがで
きる。次にモーター10を始動すると、ギヤー
9,8を介して支持筒7を回転するので、回転筒
5も共に回転する。またモーター16を始動する
と、ギヤー14,15を介して臼体1が回転す
る。臼体1と回転筒5の回転方向は同一又は反対
方向とし、同一方向に回転させる場合には、その
回転差を適当に定める必要がある。尤も臼体は停
止させたまゝ使用することもあり、回転機構を設
けない臼を用いる場合もある。
