従来に於ては酒醸造に際しての酒粕は殆んどが
粕汁とか野菜、魚肉等の漬物に利用されたり焼酎
の蒸留等に使用されているが、食生活の変化によ
つて粕汁、粕漬の需要が極めて少なくなり、その
ため酒粕は余り物として処理しなければならな
い。他方焼酎蒸留に利用される酒粕は増加する方
向にあるが、蒸留後の酒粕は重量比において100
分の1以下しか減少しておらず、殆んどの水分は
残つたままであり、焼酎蒸留後の酒粕も処理しな
