装置1が存在するため、冷気は保冷装置1の下方に滞溜
してしまい皿2を熱伝達により冷却することはできない
。従って食品を入れた皿2は、保冷装置1の伝熱が不十
分で外気温度により食品が昇温しでしまうものであるが
、本発明によれば、保冷装置1と皿2との間に水4を注
水することにより冷却された水4を介して皿2を外周か
ら冷却することができる。したが皿2内の食品は効率良
く冷却される。
