Abstract

PURPOSE:To obtain a calcium carbonate complex having excellent dispersibility in fat or oil or aqueous phase, by blending a slurry calcium carbonate with a hydrophilic emulsifying agent, dehydrating the blend and drying the dehydrated blend under reduced pressure. CONSTITUTION:Calcium carbonate in a slurry state is blended with an aqueous solution of a hydrophilic emulsifying agent and the resultant blend is then dehydrated and dried under reduced pressure. The calcium carbonate used is ultrafine particles having about 0.04mu particle size and such ultrafine particles having the size of the submicron order are not obtained by a fine pulverizer, e.g. ball mill or jet mill. As a result, the slurry calcium carbonate obtained as a semifinished product in a process for producing precipitated calcium carbonate may be preferably used. Furthermore, the hydrophilic emulsifying agent has preferably >=10 HLB and, e.g. sucrose ester of a fatty acid is cited.

In recent years, as interest in health foods has increased, various methods have been proposed for producing calcium-fortified beverages, such as so-called calcium-fortified milk, by adding calcium to milk.

For example, a method of adding water-resistant calcium to milk together with crystalline cellulose (Japanese Unexamined Patent Publication No. 7753/1983, Japanese Patent Publication No. 35945/1989), adding water-soluble organic acid calcium salts and alkaline agents to milk or milk drinks. Add to pH 6.6
There is a method for making the above adjustment (Japanese Patent Laid-Open No. 15645/1983).

In addition, as a calcium preparation for adding calcium to food, water-insoluble calcium such as calcium carbonate is mixed with edible oil and fat, and the amount of edible oil in the mixture is adjusted to 30% by weight or more. A calcium preparation has been proposed (Japanese Unexamined Patent Publication No. 57-10167).

Therefore, when fortifying milk etc. with calcium, apart from adding water-soluble calcium salts, when adding water-insoluble calcium carbonate, the specific gravity of calcium carbonate is as high as 2.6, Because it tends to precipitate during dispersion,
As seen in the above proposed method, it is necessary to prevent calcium precipitation by adding crystalline cellulose and supporting calcium through its network structure. However, it is not desirable to add substances such as crystalline cellulose to milk and the like. In addition, the proposed calcium preparation prepared by mixing calcium carbonate with edible oil uses edible oils such as salad oil and rapeseed oil, so there is a problem in its use in that it is not suitable for use by adding it to milk.

The ultrafine particles of calcium carbonate used in the present invention are extremely fine particles with an average particle diameter of about 0.04 μm, and these ultrafine particles of submicron order can be produced using a ball mill or jet mill. However, in the present invention, calcium carbonate slurry obtained as a semi-finished product during the production process of precipitated calcium carbonate (average particle size 0.1 μl) cannot be obtained using a recently developed pulverizer (the limit is about 3 μI at most). 0
Ultrafine particles with a diameter of 4 μm are dispersed in water, but in reality, it is thought that several particles are present in an agglomerated state). Ultrafine calcium carbonate particles with an average particle diameter of about 0.04 μm are obtained by chemically synthesizing so-called light calcium carbonate by a known method, and when handled as dry particles, caking is prevented. In order to do this, the surface of the colloid particles is coated with glycerin fatty acid ester, etc., and the particles are granulated to a size of about several tens of microns.

In the present invention, a mixture of the slurry of calcium carbonate and an aqueous solution of a hydrophilic emulsifier is subjected to centrifugation to precipitate the calcium carbonate, and the supernatant liquid is discharged for dehydration. A paste-like calcium carbonate complex is obtained, which is coated with an emulsifier. When this paste-like calcium carbonate composite is dried under vacuum, a porous powder with good dispersibility is obtained.

In the present invention, as described above, it is important to dry a mixture of slurry calcium carbonate and an aqueous solution of a hydrophilic emulsifier under vacuum after dehydration. If the calcium particles are not coated, even if dried under vacuum, the resulting powder will aggregate and form a dispersion (oil phase or water phase, hereinafter the same).
The dispersibility in the liquid is poor, and even when the dispersion state is observed under a microscope, many aggregates with sharp edges can be seen. On the other hand, even when calcium carbonate particles are coated with the above emulsifier,
If heat-dried or air-dried, the product will harden and coagulate, making it impossible to obtain a product with good dispersibility.

Although it is possible to use freeze-drying for the above-mentioned drying, the dispersibility of the obtained powder in the dispersion liquid is rather inferior to that obtained when drying is performed without freezing, which is not preferable.

As described above, according to the present invention, a calcium carbonate complex with good dispersibility can be obtained by simply mixing a hydrophilic emulsifier into slurry calcium carbonate without adding any other substances. It has the advantage that aqueous foods, and even oil-in-water foods such as milk, can be easily fortified with calcium.
