Abstract

PURPOSE:To make it possible to readily produce homogeneous YUBA (dried bean curd) in a short time, by forming a coating layer for preventing sticking of a coagulated thin film of soybean milk, milk to the inner wall of a soybean milk tank and casting the soybean into the form of a thin layer in the soybean milk tank. CONSTITUTION:A soybean milk tank 110 for casting soybean milk and a heating part 114 for heating the soybean milk in the soybean milk tank 110 are provided. A coating layer 120 consisting of a fluororesin, etc., is formed to prevent sticking of a coagulated thin film 18 of the soybean milk to the inner wall of the soybean milk tank 110 and the soybean milk is then cast into the form of a thin layer in the soybean milk tank 110. The resultant thin layer of the soybean milk is then heat-treated to form the aimed coagulated thin film 18 one by one and peeled. Thereby the aimed homogeneous YUBA (dried bean curd) can be readily produced in a short time.

[Prior art] Yuba, which is obtained by heating soy milk and collecting the coagulated thin film that forms on the liquid surface, is widely known as a traditional food in Japan. It is also attracting attention as a company-sealed food that contains six rich amounts of protein and vegetable lipids.

Conventionally, to produce yuba, soybeans are soaked in water, then ground and filtered to obtain soymilk, which is poured into a heating tank and heated at a temperature of about 90°C for 10 to 15 minutes. Then, the solidified thin film formed on the liquid surface was scooped up one by one with a stick and dried.

However, in this classic method of producing Yuba, the work is complicated, and furthermore, it is time-consuming as a thin film of yuba is scooped up one by one after it forms on the surface of the liquid, and it is difficult to produce it continuously.

That is, the formation of a coagulated thin film on the surface of the soybean milk is due to the evaporation of water at the surface of the soybean milk. It is thought that this is because the J concentration increases and mutual reactions occur. However, if the soy milk surface is coated with a film,
Even if the film had excellent water vapor permeability, evaporation of water from the liquid surface would be significantly delayed, and if the soymilk concentration was constant, it would take several times as long to form a coagulated thin film.

In addition, with the conventional method of retaining soymilk in a soybean milk machine and heating the soymilk, there is a problem that as the number of coagulated thin films increases, the composition of the residual liquid changes, making it impossible to maintain a constant quality. There were also points.

In other words, soymilk contains a mixture of components that coagulate easily and components that tend to remain soluble in the residual liquid, and as the coagulated aWA is removed, the concentration of non-coagulable components in the residual soybean milk increases. It's put away.

At this time, unlike conventional production equipment, only a thin layer of soymilk is injected into the soybean tank to form a single sheet of yuba; Unlike collecting a coagulated thin film from the liquid surface, the concentration of non-coagulable components in the residual liquid does not increase, or the soy milk itself changes in quality due to long-term heating, so it is always stable. This makes it possible to produce yuba of a certain quality.

Furthermore, since the soymilk is poured into the soybean milk tank and no film or the like is placed on the surface of the soybean milk, water evaporation is not hindered and a thin solidified film is formed in a short period of time by stirring.

A characteristic feature of the present invention is that a coating is provided on the inner wall of the soy milk tank to prevent a thin coagulated film from adhering to the wall surface, and soy milk is poured into the soy milk tank in a thin layer. Therefore, in this embodiment, a coating layer 120 made of fluororesin is formed on the inner wall of the shallow soybean milk tank 110, and the soybean milk necessary to form one sheet of yuba is contained in the soybean milk tank 110. 12 is injected in a thin layer.

That is, as described above, the soybean milk tank 110 is formed at a shallow bottom, and the soymilk poured into the soybean milk tank 110 forms a single sheet of bean curd that is appropriately set depending on the soymilk concentration and the required thickness of bean curd. After the coagulated N film 18 is formed in the soybean milk tank 110 as described above, the coagulated thin film 18 is peeled off from the inner wall of the soybean milk tank 110. Here, the inner wall of the soybean milk tank 110 is coated with a coating 1 that prevents the solidified thin film 18 from adhering to the wall surface. Since the il 20 is provided, peeling off of the coagulated film 18 is extremely easy.
