Abstract

PURPOSE:To obtain the titled antifreeze which can be widely applied and does not damage the quality of frozen products, by blending ethyl alcohol with pure water, a silicone resin, propylene glycol, a glycerol fatty acid ester and glycerol. CONSTITUTION:An antifreeze contains 30-60pts.wt. ethyl alcohol, 30-50pts.wt. pure water, 0.1-5pts.wt. silicone resin, 0.5-10pts.wt. propylene glycol, 0.1-5pts. wt. glycerol fatty acid ester and 0.1-5pts.wt. glycorol. The principal ingredients of the antifreeze are ethyl alcohol and pure water. When the amounts of these ingredients are outside the range defined above, e.g., when the amount of water is too large, the attainable lowest temp. is high, while when the amount of ethyl alcohol is to large, the loss of the antifreeze is increased and hence the cost is increased. The attainable lowest temp. of the antifreeze is -60 deg.C or lower, which is suitable for flash quick-freezing.

品の細胞を破壊することなく、味覚、栄養をほとんどそ
のまま保持することができる。このため、農水産物や加
工食品類の冷凍に最適である。
