本発明は瞬間急速冷凍用不凍液に関し、特に農水産物や
加工食品類の瞬間急速冷凍用の冷媒に通した不凍液に関

を生じ易く、到達最低温度も一30℃と高く、瞬間急速
冷凍液としては充分満足のいくものではなかった。また
従来の不凍液は冷凍時間が長くかかり、また冷凍品の品

用範囲が広く、かつ冷凍物の品質を損なわない不凍液を

には、上記必須成分以外に例えばアルコールの臭気を柔
げるための甘味料としてd、J−リンゴ酸ナトリウム等

(発明の効果)
以上のようにして得られた不凍液は極めて安定であり、
−60℃に冷却しても充分な流動性を有し、浸漬法によ
る急速瞬間冷凍の冷媒として充分使用できることが確認
された。本発明の不凍液は、冷凍時間が短く、数分間で
食品類を冷凍することができ、また解凍時間も短く、食
品の細胞を破壊することなく、味覚、栄養をほとんどそ
のまま保持することができる。このため、農水産物や加
