上げれば短時間で死滅し、逆に温度が低くなるにつれて
滅菌の効果は少なくなる。その関係を第2図に示す。も
ちろん大腸菌のように温度に弱い菌や、かなりの高温度
に対しても抵抗をもつものもあって一率には言えないが
、水リザーバで水が滞留し雑菌が増殖する時間は少なく
みても数時間は必要であゆ、場合によっては1日、2日
といった単位での水の滞留もあり得る。この時間内で雑
菌を増殖させずさらに滅菌処理をすればよいのであって
滅菌に必要な加熱温度は70℃で十分と考えられる。な
お、30〜40℃では逆に急激に増殖するから下限温度

染された水を供給することがなくなりカップ式飲料自動
