Abstract

PURPOSE:To produce a jelly-like food in an optional size and shape, by coagulating a liquid food solution containing a gelling agent, e.g. alginate, etc., into a jelly-like form through a dialytic membrane. CONSTITUTION:A liquid food solution containing 0.8-2.0% alginate or low- methoxyl pectin is filled in a container in the form of a tube or bag, etc., consisting of a dialytic membrane, e.g. cellophane membrane or collodion membrane, etc., and hermetically sealed. The container, consisting of the above- mentioned dialytic membrane and filled with the food solution is then dipped in a solution containing polyvalent metallic ions, e.g. calcium chloride or calcium lactate, etc., to coagulate the food solution in the container in the form of jelly.

液に浸漬することにより任αの形状のゼリー化食品を得
る方法が考えられている (特開昭60−12940号
公報)〔発明が解決しようとする問題点〕 従来の製造方法によると得られたゼリー状食品はいずれ
ら形状が粒状であり大きさにも限界がある。また、容器
内で軽くゼリー化した後、本格的にゼリー化させる方法
はCaOを均一に散布しかつ混合するために、かなりの
激しい撹拌が必要となり、気泡の抱き込みと、部分的ゲ
ル形成などを生じ、滑らかな組織のものが得難いという
問題へを有している。
