Description

【発明の詳細な説明】 本発明は粘着性を有する食品の粘着を防止する
ため使用する手粉の余剰分を回収する装置に関す
るものである。 従来、ビスケツト、クラツカー、パイ、ペース
トリー、せんべい、麺等の生地シート圧延方式に
よる食品の製造工程に於いては、圧延、折りたゝ
み、切断成形等の諸工程の前後にてシートがシー
ト運搬コンベアー、ロール、切断成形型等に付着
するのを防止する為に手粉(小麦粉)を生地シー
トの上面及び下面に均一に撒布することが広く行
われて居る。 一般に手粉は必要量以上に使用されることにな
り易いので、余剰手粉の多く持着した生地シート
をそのまま切断して、焙焼すると、焼上げ後の焼
物製品の表面は良好に仕上がらず、艶がなく白く
粉をふいた様相を呈し、パイ、ペーストリーの如
き外観として艶が必要とされる製品に於いては特
に商品価値を低下させる原因となる。 又、生地シートの焙焼前に回収した手粉は通常
篩別した後に再使用することが可能であるが、一
度生地シートに持着して焙焼された手粉は焙焼後
に回収しても再使用出来ない故に、焙焼前に効率
良く手粉を回収することが歩留りを良くする上で
必須である。 このため従来、人手又は機械により余剰の手粉
を回収することが行われているが、小規模の人手
による場合は別とし、連続製造で量産も行う場合
には、生地シートの下面に付着した手粉の余剰分
は、シート運搬コンベアー相互間の移行間隙に於
いて自然落下、機械的なかき落し等の方法で除去
し、ドウシート上面に撒布された手粉の余剰分
は、人手により刷毛等で掻き取るか、或いは吸収
開口部を持つた除去装置のノズルを生地シート上
面に近ずけ吸引して回収する方法等が行われてい
居る。然し、人手による方法は作業能率が悪く、
吸収引による方法は生地シート上面に比較的弱く
付着した余剰手粉を吸収回収し得るが、生地シー
ト上面、特にパイ、ペーストリーの如き軟らかい
生地のシート上面に強固に持着した余剰手粉は吸
収回収し難い。又、持着した余剰手粉を回収する
ため吸引力を強くすると、パイ、ペーストリー等
の如く生地シート自体が軽量な場合には吸引装置
の吸引方向へ持ち上げられたり、吸い込まれたり
するトラブルが発生する欠陥がある。 本発明者らは上記した従来の余剰手粉除去作業
及びそれを行う為の装置の欠陥を解決し、確実に
効率よく余剰手粉を除去する装置を得んと研究し
たところ、圧延機でのした生地シートを生地シー
ト搬送路にそつて搬送し、該搬送路上方には刷子
運行装置を配し、該刷子運行装置には少く共無端
軌道と該軌道に取付けた刷子とを設け、無端軌道
の下側は所定間隔おいて生地シート搬送路面と平
行に対向させ、且つその回動軌跡が生地シート搬
送路と所定角度とをなしてシートの搬送に逆らつ
て回動するごとくなし、生地シート面に散布せら
れた余剰手粉を斜めた掃きとることにより解決す
ることが出来た。 本発明を図面に示した例により説明すると、第
1図に示す。1は既存の生地の折りたたみ装置を
示し、図示しない圧延装置により一定厚さにされ
た生地シート2は該装置により折りたたまれ、テ
ーブル3上を運行する生地シート搬送コンベアー
4上に連続的に載置される。従つて生地シート2
は生地シート搬送コンベアー4に乗つて連続的に
移送され、2対乃至多数対の圧延ロール5,5′
に供給されて圧延された後、再びコンベアー4′
上に連続的に載置されるが該コンベアー4′の上
方にはそれを横切つて手粉撒布機6がテーブル
3′,3′間に固定架設してあり、搬送コンベアー
4′即ち生地シート2′の運行速度に応じて生地シ
ート2′上に手粉(小麦粉)を撒布する。手粉を
撒布された生地シート2′は続いて1段又は多段
の圧延ロール7により所定の厚さに圧延され手粉
を持着されたのちに搬送コンベア4″により更に
搬送され、切断成形機8により所定の大きさに切
断される。第1図に於いては刷子運行装置全体
を示し、切断成形機8により切断された生地シー
ト2を受けて余剰の手粉を除去するものであ
る。第2図に示す如く刷子運行装置はテーブル
3″上を運行する搬送コンベア4″を斜めに跨いで
固定した荷台10上に載置せられているが、荷台
10は生地シート2の搬送路イに対し好ましく
は30度〜45度の角度を以て斜めに横切る如く固定
するものである。荷台10の各端部近傍に上下調
節可能軸受11,11…を設け、左右の上下調節
可能軸受11,11間に駆動軸12,12を遊嵌
挿する。従つて、駆動軸12,12の高さは上下
調節可能軸受11,11のねじ13,13…を回
動することにより上下に調節できるのである。又
一方の駆動軸12を外側に伸長せしめ、その端部
にプリー14を固定し、ベルト16を介して変速
機付モーター15と連動させる。前記荷台10,
10の内側には前後の軸12,12間に2本の連
結杆17,17を互に平行して設け、更に前後の
軸12,12にはそれぞれ鎖車18,18を固定
する。そして、それぞれの連結杆17,17に平
行してチエン19,19を張設し、搬送路の進行
方向イに逆う方向ロに回転させる。該チエン1
9,19は無端軌道をなし左右同一速度で回動で
きるものは何れも使用することができ、例えばシ
ンクロベルトに変えても良いものである。又後記
する刷子20を左右について前後上下のブレなく
中央で固着し得るものでは1本としてもよいので
ある。該左右チエン19,19間には軸12に平
行して刷子20を固定するが刷子20は1本〜少
数でも良いが好ましくは等間隔をおいて多数放射
状に連設し該刷子20の刷毛21は常に生地シー
ト2に接する如くする。この刷毛先端21の位
置調節は前記したねじ13を回動して行うもので
ある。又、刷子20は木製、金属製、或いはプラ
スチツク製の床材の上に刷毛21即ちプラスチツ
ク製、或いは動植物由来の長毛を植設したもので
あるが、この長毛は長さ、太さ、腰の強さを適宜
選定する必要があり、長さ50mm以上で適度の反発
力を持つた細毛のものが使用に適する。又、刷毛
21が硬く、反発力の強いものでは生地シート特
にパイ、ペーストリー等の如き軟らかい生地シー
トの表面を損傷する恐れがあり、逆に細過ぎて反
撥力の弱いものでは、手粉の掻取り効果が小さく
なる。又抜毛して異物混入をもたらさない様にし
つかりと固定するよう植設する必要がある。尚、
22は刷毛20にり除去された余剰手粉を周囲に
飛散させない為のカバーである。 本発明の刷子運行装置は上記の如くしてな
り、前記切断成形機8で切断せられた生地シート
2は搬送コンベヤー4″上に載置されて搬送さ
れ、刷子運行装置の下方に達し、表面に持着し
た余剰手方が掃き立てられるが、刷子運行装置
は生地シート搬送路、換言すれば生地シート搬送
コンベアー4″に対して30〜45度の角度に設置さ
れ、その刷子20は生地シート2の進行方向イ
に対し斜に逆う如くロ方向に回動する。従つて、
手粉は斜め横方向より掃き立てられ生地シート2
に持着した粉でも効率よく除去できる。若し本
発明の装置によらず、生地シート2の進行方向
に対して直角方向とか或は60度の斜め方向に正回
転運行するように配置した場合には図例の場合に
比し手粉の回収率は極めて低くなるのである。な
お、図面の例に付加して従来の吸引式手粉回収装
置(図示してない)を刷子運行装置の後方に設
けると、更に完全に手粉を回収できる。上記の如
く、手粉が除去され清浄化された切断生地シート
2は、オーブン23に入り焼成せられるが、切
断生地シート2上には殆んど手粉が残存してい
ないので艶のよい製品に焼上げることができる。 本発明の装置はパン類、ビスケツト類、米菓
類、その他一般の手粉を使用する広範囲の食品に
使用して極めて大きい効果を奏するものである。
