Abstract

PURPOSE:To prepare the titled food having delicately different feeling to the tooth from that of the conventional food, by slitting a meat paste to fine filaments, arranging the filamens parallelly in the form of a sheet, and rolling the obtained substrate sheet spirally so as to croos the longitudinal direction of the filament slantly. CONSTITUTION:A number of finely slit filaments of a meat paste product composed mainly of ground fish meat are arranged in parallel connecting the sides of the filaments with each other to obtain a sheet. The sheet substrate for food is rolled spirally in a manner to cross slantly the longitudinal direction of finely slit filament to obtain the objective food. The food substrate can be manufactured e.g. by slitting a sheet of a fish paste product parallelly with small intervals, separating the slit filaments from each other, and bonding a part of the filament with fish paste. The slitting of the fish paste product can be carried out by passing a fish paste product sheet between a pair of slitting rolls 2, 2 form one end.

The present inventor is not satisfied with the simple integration of fiber bundles as in conventional fiber bundle food products, but has developed a new fiber bundle in which individual chopped fibers are spirally swirled and integrated. While conducting research for the purpose of providing food products, we discovered that the texture was different from conventional products, and the structure was suitable for industrialization in terms of manufacturing.
A crab leg-like tda-like food was reached.

For example, a food base material made by arranging a large number of the above-mentioned fibrous meat paste products in parallel by connecting them to each other's sides to form a sheet is as follows. After cutting the fibrous material into parallel pieces and separating the fibrous shreds into individual pieces,
Parts of each are joined using fish paste. ◎、Sheets of fish paste products are placed parallel to each other with narrow intervals, and
By cutting the fibrous material incompletely, the area between each cutting line consisting of the cut υ seam and the seam is made into shredded fibrous material. At the same time, the seam that is partially left on the cutting line is It may be obtained by a method such as using a method for connection.

In addition, when making a cutting line (1) consisting of a cut line 01) and a seam (]2) as shown in the illustrated example (Fig. 1) on a fish paste product by the method ◎, the sheet of the fish paste product is is passed from its tip between a pair of cutting blade rolls (2) (2) as shown in the illustrated example (Fig. 3), and cut by a cutout (51) partially provided on the cutting blade periphery of the cutting blade roll. In addition, the fish paste product cut by the cutting blade roll is further received by a conveyor and transferred to the next process, but ◎
In the case of method (2), the bonding step of the fibrous shredded material is essential in the case of method (2) - Sprinkle fish paste on the surface of the shredded fibrous material, and then heat it to gel the fish paste, thereby forming a fibrous material. This method is advantageous in that it not only eliminates the need for the step of joining the shredded products, but also enables smooth transfer operations when the shredded fish paste product is transferred to a belt conveyor.

In the present invention, winding up the food base material in a twisted manner in a direction diagonally intersecting the user direction of the shredded fibrous material means using the well-known principle of twisting as is.

That is, as is well known, it is made by rolling up a long, thin paper while twisting it, but if the quality of the paper is not as soft as Japanese paper, the paper is rolled up from the corner of the tip. Even if the paper is rolled up diagonally, it will be thicker at the back, and if the original paper is long, it can be made into any length with a constant thickness except for the tip.

The present inventor has developed various types of sheet-like food substrates shown in FIG. However, as a result of repeated studies on how to roll it up, we found that the core is not hollow and is rolled up in such a way that it maintains a constant thickness except for the tip. , the food of the present invention rolled up into a strand shape has been achieved.

Roll up the sheet-shaped food base material (4) shown in Figure 1,
In order to obtain the crab leg-like fiber bundle food of the present invention, it is cut by the cutter roll as described above (in the case of method (■), it is further subjected to a bonding step), and then conveyed ( The long food base material (4) that is continuously fed in step 5) may be rolled up so that the traveling direction of the rolled material forms a dogleg with respect to the conveying direction of the belt conveyor.

If the angle α between the winding motion axis direction and the longitudinal direction of the food base material before winding is too small, the shredded fibrous material will rotate slowly, resulting in a conventional fiber bundle shape. The food and texture will be the same. Therefore, the angle α

When making paper twine, it is necessary to pull the front part while winding it, and at the same time rotate the rear part of the rolled part in the opposite direction.
Because it has flexibility and adhesiveness, the core does not become hollow easily, even if the force relationship is not controlled as strictly as when making paper strands. Moreover, it is possible to obtain a stranded object having a constant thickness except for the tip, and the winding operation itself can be mechanized.

For example, after cutting, a long food base material (4) that is continuously conveyed on a belt conveyor (5) may be rolled up manually only at the beginning, and thereafter, as shown in FIG. As shown in the illustrated example, a food substrate (4) is machined using a simple winding device consisting of a feeding belt conveyor (6) and a rotating belt conveyor (7) located on the side thereof. It can be rolled up continuously.

In addition, when rolling up, sprinkle a small amount of fish paste on the top surface of the base material (the inner side when rolling up),
Afterwards, the rolled product may be heated to completely fix and integrate the roll, or the fish paste may be sprinkled only on the outer surface of the roll and then heated to complete the fix and integrate.

As is clear from the above explanation, the crab leg-like fiber bundle food of the present invention can be prepared according to the following conditions: 1). Unlike conventional products, the shredded fibers are in a swirled state, resulting in a fibrous bundle-like food with a slightly different texture from conventional products.
