Abstract

PURPOSE:To prepare shaved ice keeping the flowable state, preventing the mutual adhesion of the particles of shaved ice, by preparing shaved ice having a temperature lower than the freezing point from an ice cube having a temperature lower than the freezing point, and sprinkling the shaved ice with syrup, honey, etc. cooled to a specific temperature. CONSTITUTION:An ice cube cooled below the freezing point is shaved to obtain shaved ice keeping the flowable state while preventing the melting or freezing and agglomeration of the shaved ice. The shaved ice is sprinkled with syrup or honey, etc. cooled at a sufficiently low temperature to keep the shaved ice from melting even if each particle of the shaved ice is covered with the syrup, etc. The shaved ice can be maintained in the flowable state without causing the freezing and agglomeration of the particles to form a spongy texture, by storing the shaved ice at a temparature lower than the freezing point.

Traditionally, in coffee shops and the like, shaved ice is placed in containers and served to customers by pouring honey or syrup over it. However, recently, shaved ice sprinkled with syrup has been filled into paper cups and sold as a frozen dessert at confectionery stores along with ice cream and other products.

By the way, the shaved ice frozen dessert has a simple taste different from ice cream and the like, and sales are increasing year by year, but the shaved ice particles in the cup freeze together and become spongy. Therefore, if you want to eat this, you have to forcefully poke it with a plastic spoon or the like that comes with the frozen dessert to break up the spongy lumps, which is inconvenient as you cannot get the smooth texture you would get at a coffee shop.

In view of the above circumstances, it is an object of the present invention to provide a method for producing a shaved ice frozen confectionery in which each particle of shaved ice does not freeze with each other. The method for producing frozen shaved ice confectionery consists of making shaved ice and sprinkling syrup, honey, etc. cooled to a temperature that does not exceed the 6 freezing point of the shaved ice even when applied in an amount that covers each particle of the shaved ice.

To produce the shaved ice frozen confectionery according to the present invention, first, the raw ice block is brought to below freezing point. Shaved ice is made by scraping this block of ice with a hook-shaped blade, but this shaved ice must be kept at a temperature below the freezing point to prevent the particles from freezing together. When turning ice cubes into shaved ice, the temperature of the part where the blade touches the blade temporarily rises due to friction and compression, but if you keep the temperature of the ice cube below the freezing point of the shaved ice, the temperature of the shaved moss particles will increase. The heat capacity of the parts cools them down and keeps them free from melting and freezing. Place the shaved ice in this state into a paper cup or the like and sprinkle with syrup, etc. The temperature of this syrup is cooled in advance to a temperature at which the temperature of the shaved ice does not rise above the freezing point even when the amount of syrup is applied to cover each particle of the shaved ice. The above-mentioned frozen dessert coated with syrup maintains its smooth state by being stored below the freezing point.

Further, in conventional shaved ice frozen desserts, fine shaved ice is used because coarse shaved ice cannot be broken up with a plastic spoon or the like if each particle binds with water and forms a block. However, when shaved ice is thin, the amount of syrup relative to the ice increases, and although it can enhance the sweetness of a frozen dessert, it is not suitable for soothing a dry throat like ice cream. However, by using the method of the present invention, the particles do not bind together and a smooth shaved ice frozen dessert can be obtained.
Moreover, the particle size of the shaved ice can be freely adjusted by adjusting the protruding dimension of the hook-shaped blade or by adjusting the ice crusher. Also,
The amount of syrup that covers the particles varies depending on the particle size, making it possible to supply a wide variety of shaved ice frozen confections that meet various needs.

Note that shaved ice made of thin particles has a small heat capacity held by each particle, and if the temperature rises locally due to an external cause, it will easily melt, and the particles will freeze together. Therefore, the ice block must be operated at a temperature considerably lower than the freezing point, and the temperature of the syrup to be sprinkled must also be set at or near the freezing point.

On the other hand, large-particle shaved ice has a large heat capacity in each particle, so even if one part of the shaved ice rises in temperature, it is immediately cooled down and does not exceed the freezing point, and the temperature of the syrup sprinkled on top of the ice particles also increases. Because it is cooled by
The temperature conditions are less severe than for fine-grained shaved ice.

As mentioned above, if the shaved ice frozen dessert made by the method of the present invention is stored at a temperature below the freezing point, it will always remain fluffy, so there is no need to poke it to break it when eating it. You can get it in the condition you would eat at a coffee shop. Therefore, the method of the present invention can be used to produce snow-like confectionery similar to conventional frozen shaved ice confectionery in cups, or large ice creams with a syrupy coating on the surface that are less sweet and suitable for soothing dry throats; This is an excellent method that allows you to make a wide variety of smooth shaved ice frozen desserts, from snow-like ones to those based on shaved ice in which coarse ice particles are appropriately distributed.
