In addition, there are those in which the surface of solid candy, such as spheres, cubes, and plates, is simply painted with liquid ink using food coloring using rubber stamps, etc. There are so-called electronic printing methods that apply high voltage to powder ink and print on the food surface without contact, but various and sophisticated market demands such as complex, multi-colored painting, multilayering, and three-dimensional painting are available. It is impossible to respond to this. Moreover, it has recently attracted much attention as a means of adding considerable added value to products such as sweets for infants through decoration. On the other hand, as a result of various studies, the present inventors made a water-soluble edible film printed with water-resistant edible ink on the surface of a high water content edible material in a heat-molten state. Only the film is once melted by moisture and heat on the body surface, the printed image formed by the printing ink is retained and remains on the food surface layer, and then the film-forming substance and the edible body are both cooled and solidified. The present inventors have discovered that not only can the above-mentioned various problems be solved all at once, but also special effects can be achieved by applying the method to the present invention.

以下本発明の詳細を述べる。The details of the present invention will be described below.

The edible ink used in the present invention may be either oil-based or water-based, but it is necessary to maintain a clear printed image even when the base film is dissolved in water during the painting process. It is necessary that the printed image be water-resistant.

Therefore, in the case of water-based edible ink, it is necessary to use a type that is easily insolubilized, such as egg white, as a vehicle, and to make it insoluble in water by post-treatment such as heating after printing. In addition, an oil-based printing ink with a softening point of 30°C or higher and containing an edible solid triglyceride of higher fatty acids as the main vehicle can be used in the printing process of the present invention to maintain a clear printed image and improve printing workability. This is particularly preferable than the surface.
In general, it is preferable to combine an aqueous vehicle and an oil vehicle with an aqueous colorant and an oil colorant, respectively, from the viewpoint of dispersion and color development. Of course, as the coloring agent, it is necessary to use an edible coloring agent regardless of whether it is oil-based or water-based, and particularly preferably a natural coloring agent. Even if a water-based coloring agent is kneaded into an oil-based vehicle, the normal color development will hardly be observed in the absence of water, but such a combination may be used in special cases due to contact with foods with high water content. Available for use. From the viewpoint of stability and durability of the printed image, it is preferable that the oil-based vehicle is primarily an edible solid higher fatty acid triglyceride and has a softening point of 530°C or higher, such as a thiokolate-based vehicle based mainly on cocoa butter. is desirable.

Higher fatty acid triglycerides include stearic acid triglyceride, palmitic acid triglyceride, and laminated triglyceride.
Those mainly consisting of a monolithic triglyceride made of one type of saturated higher fatty acid with C, O or more, such as pentauric acid triglyceride, are particularly preferable from the viewpoint of printability and from the viewpoint of a high softening point. . However, edible solid fats and oils obtained as natural products such as beef tallow, lard, palm oil, cacao butter, highly hydrogenated animal and vegetable oils, hard butter, and high softening point thiokolate, or their hydrogenated products, are also used. It can be used as well. These triglycerides can be used alone or in combination of two or more. In addition, as a vehicle, glycerin with higher saturated fatty acids as appropriate,
It is also possible to use edible partial esters of edible polyhydric alcohols such as sorbitol and sucrose, as well as those blended with natural waxes, rosins, lacquers, etc. as appropriate.

Synthetic colorants are generally preferred and available in powder form that contain almost no solvent, but some natural colorants are available only in liquid form or in solution form dissolved in edible polyhydric alcohols, etc. In such cases, the softening point of the oil-based solid ink may be significantly lowered, so it is particularly necessary to incorporate triglyceride with a high softening point as the oil-based vehicle.

In addition, in the case of solid edible oil-based ink, the plate is heated,
It is necessary to screen print on the edible film while heating and melting the ink. Therefore, it is desirable that the softening point of the edible oil-based ink is 30°C or higher. If it is lower than this, the printed image of the edible printed film tends to stick at room temperature, making it difficult to handle the printed film. Also, the softening point is 1
If the temperature exceeds 00° C., the printing workability becomes somewhat inferior, which is not desirable. The edible material used in the present invention has a high water content containing 20 weight (!) or more (internal division) of water, and moreover, it melts when heated and has fluidity, and solidifies when cooled and has fluidity. For example, pudding, bavarois, jelly, yokan, water yokan, tokoroten, etc.

Among them, high-quality confectionery such as pudding, bavarois, jelly (including fruit jelly), and yokan are particularly effective in terms of improving product value. Two or more types of edible substances may be used in combination in a multilayered manner. In addition, the edible objects may be added with various common food additives such as plasticizers, colorants, flavorings, spices, sweeteners, acidifiers, antioxidants, preservatives, and nutritional fortifiers as necessary. May be blended.

For that purpose, starch, algin, dextran,
Polysaccharide-based products such as curdlan-based, pullulan-based, mannan-based, gum-based, cellulose-based (mainly modified types),
casein type (including salt type), gelatin type,
Any known protein-based products such as gluten-based, albumin-based, zein-based, collagen-based, etc. can be used, but in particular protein/polysaccharide binary-based products (preferably sodium caseinate/starch-based or gelatin-based) can be used.・Starch-based products are particularly desirable because they have excellent dry extrusion moldability, have a good balance of performance, and have good secondary processability. Edible films and sheets are mainly made of the above-mentioned natural polymers, but they also contain edible smooth K plasticizers,
Colorants, fragrances, spices, seasonings, sweeteners, preservatives, fillers, etc. are appropriately blended, and it is particularly desirable that the film be continuously produced by dry extrusion.

The method for painting edible objects using edible printed film is to adhere the edible printed film to the surface of the edible object that is poured into a mold in a heated molten state during the manufacturing process, before it cools and solidifies. When allowed to rise, the film immediately dissolves due to the action of the water and heat on its surface layer.

付け方法の大きな特徴の一つである。
At this time, it is preferable to use the printed film with the printed side on the inside because the printed picture remains more clearly on the surface of the edible object. In addition, since the edible printed film of the present invention is a water-resistant printed film on a water-soluble film using edible ink,
Even if the film is dissolved in water, the printed image can remain clearly and undamaged on the surface of the edible object.
Images printed with water-soluble inks are undesirable because they quickly dissolve in water and become diffused and blurred. Next, in the manufacturing process of cooling and solidifying the edible object, the printed image on the surface of the edible object is formed by the once-dissolved water-soluble edible film solidifying again on the surface of the edible object with a high water content. One of the major features of the painting method of the present invention is that it is fixed and stabilized by forming part of the layer 0.

From this point of view, gelatin-based materials or gelatin/starch-based materials are preferred. In this way, it has become possible to easily, stably, and hygienically apply sharp paintings on the surfaces of edible objects with high moisture content, which was previously impossible. Its value is immeasurably great. The edible printed film of the present invention may be placed in advance on the bottom or side surface of the mold into which it is to be injected, or may be applied to the surface of the mold after injecting.
