Abstract

PURPOSE:To enable the preservation of coffee in high quality without lowering the flavor, by adding hydraulic setting fine powder to granular slaked lime impregnated with a moisture-controlling liquid, putting the resultant composition in a packaging material having specific CO2 permeability and moisture permeability, and sealing the product together with roasted coffee in a gas impermeable bag, etc. CONSTITUTION:Granular slaked lime having particle diameter of 0.5-3mm. is impregnated with water or a moisture-controlling liquid obtained by dissolving an inorganic compound (e.g. NaCl) or an organic compound (e.g. glycerol) in water to adjust the water-content of the lime to 1-35%.
