Abstract

PURPOSE:To make it possible retain heat in a stabilized condition by a method wherein a heating operation by a heater is switched to a high frequency heating operation after the termination of the former so that the reaction of a temperature detecting means inserted into a foodstuff is accelerated. CONSTITUTION:The heating chamber 5, the finish temperature of the foodstuff and the temperature keeping time are set at a control section 1 to start cooking device. A power relay 8 is closed by a control circuit 12 and a bidirectional control rectifier 16 becomes conductive to impress a voltage upon the heater 15 so that the heating operation is started. When the temperature in the heating chamber reaches the set temperature, the bidirectional control rectifier 16 operates intermittently to thereby keep the temperature in the heating chamber constant. At the same time, the temperature of the foodstuff elevates gradually due to hot air circulating through the heating chamber as it is detected by a temperature probe and when the set temperature is reached, the bidirectional control rectifier is turned OFF and the heating operation of the heater is terminated.

て、調理開始後、自動的に調理が進められて自動的に調
理が終わると云った具合で、その調理終了時間を予測す
る事が困難になシ、加熱終了後の食品の保温の必要性は
、ますます増大する傾向にある。しかしながら、ヒータ
ーで食品の内部温度を一定に保つ事は至極困難な事であ
り、その理由は、ヒーター加熱は、食品を外部から加熱
し、食品に挿入された温度検知手段に到達するまでに非
常に長時間を要し、そのため反応速度が鈍く、食品の表
面温度が上昇し過ぎるためである。
