Abstract

PURPOSE:To provide a fish paste product having desired color, by packaging a fish paste product with a packaging film printed with an edible ink, and transferring the ink to the product. CONSTITUTION:A packaging film coated with a >=2-valent sugar is printed with an edible ink in a manner to be transferable to the base of a fish paste product. A fish paste product is packaged with the film, and pressed by a proper means to transfer the edible ink to the fish paste product. When the film is released from the product before serving, a clearly and beautifully colored fish paste product having the pattern of the edible ink transferred to the surface can be obtained. The packaging film is composed mainly of a film coated with a sugar. The edible ink is preferably those based on an aqueous alcohol solvent, e.g. produced by adding a food color to an alcoholic solution of shellac which is a kind of natural resin.

所内側にもつ菓子型を形成し、これに流動状の油性菓子
生地を流しこみ、冷却固化することにより油性菓子生地
に油脂を主材とjる食用インキを転写したものが提案さ
れているが、この場合でも菓子型に流動状の油性菓子生
地を流しこむものであって、水産燻製品の成形品に包装
用フィルムを被覆して包装することにより可食用インキ
を鮮明かつ美麗に転写することはlIlシいのが実情で
あった。
