Abstract

PURPOSE:To provide a filmy diet sweetener having low calorific value, thick taste, and high fashionability, by drying the liquid film of a solution containing a sweetener and pullulan. CONSTITUTION:A proper amount of natural or artificial sweetener (e.g. glycyrrhizin, stevioside, saccharin sodium, etc.) and optionally an additive such as sodium citrate, are added and dissolved in a solution (about 25% concentration) of pullulan (a mucous polysaccharide produced out of the bacterial cell by the cultivation of Pullularia pullulans). The solution is cast on a mirror-smooth plate to a proper thickness, dried with hot air at about 80 deg.C, and cut to desired shape to obtain the objective diet film.
