Abstract

PURPOSE: To obtain an edible oil having the effect of preventing the increase of the cholesterol level in blood, by adding vitamin E and vegetable sterol to an oil.
CONSTITUTION: The objective oil can be prepared by mixing (A) 0.5W10% vitamin E synthesized or extracted from a natural material, (B) 0.5W30% vegetable sterol such as sitosterol, stigmasterol, campesterol, etc. and (C) the remaining part of a liquid oil used conventionally for the preparation of foods, e.g. corn oil, safflower oil, wheat embryo oil, cottonseed oil, soybean oil, etc. The vegetable sterols are those separated and purified from the sludge produced in the deodorization process of vegetable oil, by solvent extraction and esterification followed by molecular distillation and saponification.
