Abstract
PURPOSE: To prepare a brewed SAKE, by concentrating an ultrafiltrate obtained by separating proteins from cow's milk through the ultrafiltration or a solution, containing lactose, and discharged from a preparation process of dairy products, and subjecting the resultant concentrate to the alcoholic fermentation.
CONSTITUTION: A pasteurized cow's milk (M) is fed to a UF apparatus 2 by a pump 1, ultrafiltered and separated into a proteinic concentrate (MC) in which the proteins are concentrated from about 3% to 9W12% and an ultrafiltrate (Mf) containing lactose essentially. The resultant ultrafiltrate (Mf) is fed to a balancing storage tank 5, to which a solution (Mf'), containing lactose, and discharged from another preparation process 4 of dairy products is also fed. The resultant mixture is fed to an RO apparatus 7 by a high pressure pump 6 and then separated to give an RO concentrate (Mrc) in which the lactose concentration is increased from about 5% to 12W25% and an RO ultrafiltrate (Mrf). The resultant concentrate (Mrc) is treated in a heat-treating apparatus 8 while sterilized and desalted, passed through a separator 9, and fed to a fermenter 12. A yeast is added thereto to carry out the alcoholic fermentation.
