Abstract

PURPOSE: To keep dry sausages from getting moldy, and to carry out the drying and sterilization in the preparation of dry sausages, effectively, by introducing ozone-containing air in a drying chamber and introducing the dry sausage into the chamber from the downstream side.
CONSTITUTION: Ozone-containing dry air 2 of about 10W17°C and about 70W75% RH is introduced into the drying chamber 1, into which dry sausages 3 placed on the truck 4 are introduced through the inlet 13. The truck 4 holding the sausages 3 is pulled with the rope 15 driven along the direction of the arrow (r) by the driving means 16, and transferred toward the upstream-side of the dry air flow 2 along the zigzag path defined by the guides 17 and the rails to effect the sterilization, dehumidification and drying of the sausages 3. The dried and sterilized sausages 3 are pulled out of the chamber 1 from the outlet 4, and again introduced into the chamber 1 along the path of the arrow (q). The dry air 2 passed through the gap between the sausages 3 is discharged from the drying chamber 1, dehumidified and cooled with the dehumidifying and cooling apparatus 6, adjusted to the preset temperature, charged with ozone by an ozone lamp and ozonizer to replenish the consumed ozone, and recycled to the drying chamber 1.
