Abstract

PURPOSE: Roasted bread crums and oil are made into fine particles to prepare a powder mix for fry with no coating and a food product is covered with the powder mix and heated in an electronic oven to give the objective food product like fry with no coating, having good taste and texture, without operation of frying.
CONSTITUTION: A mixture consisting of 10W70wt% roasted bread crums, 10W 50wt% roated grain flour, 0.5W10wt% protein-rich substance such as albumen powder or casein, 0.1W3wt% protein coagulant such as tartaric acid or chymosin and 5W40wt% food oil or further containing proper amounts of seasonings, spices, flavors and colorants, is made into fine particles of less than 20 mesh to prepare a flour mix for fry with no coating. A food product or, after coated with a batter of a protein-rich substance, is covered with the mix, when necessary, coated with oil, then heated in an electronic oven.
