Abstract

PURPOSE: To obtain at low cost titled coloring matter which does not emit foreign odor and is suitable for foods, by a method wherein a phospholipid content of oleo- resin obtd. from a carotenoid-contg. plant is adjusted to a level of not lower than a specified value, the oleo-resin is treated with a polar org. solvent and then with a solubilizing agent for phospholipid.
CONSTITUTION: When oleo-resin recovered from a carotenoid-contg. plant such as carrot, mandarin, tomato, or capsicum annuum L. has a phospholipid content of not higher than 5%, a phospholipid such as soybean lecithin, or egg lecithin is added to the oleo-resin to adjust the phospholipid content of the oleo-resin to a level of not lower than 5%. Then the oleo-resin is treated with a polar org. solvent such as isopropanol, n-propanol, or acetone to separate and deposit a phospholipid entraining fine particulate carotenoid coloring matter. The deposited material is separated and recovered by a centrifugal separation, etc. A solvent (e.g. petroleum ether, toluene) which dissolves only the phospholipid is added to the deposited material to dissolve and remove the phospholipid, whereby the desired carotenoid coloring matter is obtd.
