Abstract
PURPOSE: To prepare acetoin useful as a food additive (a component of the flavor of butter, etc.), in high yield, with simple procedure, by oxidizing 2,3-butanediol with O2-containing gas in an aqueous solution using a Pt-group metal as a catalyst.
CONSTITUTION: 2,3-Butanediol is contacted with O2-containing gas in an aqueous solution in the presence of a Pt-group metal catalyst (e.g. metallic Pt, Ru, Pd, Rh, Re, Os and Ir, and their oxides; especially metallic Pt or Pd.) at 0W120°C, pref. 30W100°C to afford acetoin useful as a component of the flavor of butter, cheese, margarine, etc. The use of the O2-containing gas as the oxidizing agent eliminates the necessity of removal of the agent from the reaction product. The separation and purification of acetoin can be carried out easily because of the little production of by-products.
