Abstract

PURPOSE: To obtain a transparent lecithin composition of superior water dispersibility by compounding ethanol and water in lecithin at a specific ratio and uniformly compounding these as a lecithin composition.
CONSTITUTION: Ethanol and water satisfying 2≤x≤15, 0≤y≤x+1, 0≤y≤4/(x- 5.5)+1.5 (where ethanol =xwt%, water=ywt%,) are compounded uniformly in lecithin, thereby preparing the lecithin composition. This lecithin composition is good in water dispersibility, disperses easily in water simply when agitated therein, and is transparent and stable; therefore, it is effectively usable as an emulsifier.
