Abstract

PURPOSE: To prepare the title compound used for an expanding agent in bakery, etc., an additive for bean curd, ham, etc., constructions, buildings, etc., in one step in high yield and high selectivity, by oxidizing glucose with molecular oxygen, using a palladium catalyst in an organic solvent.
CONSTITUTION: Glucono-δ-lactone is prepared from glucose, in one step, by oxidizing glucose with molecular oxygen using a palladium catalyst in an organic solvent. This method is extremely economical and favorable as a preparation method on an industrial scale. The organic solvent is, e.g. an amide compound, an alcohol, an aliphatic ether or an ester compound. The catalyst is a palladium catalyst pref. impregnated into a carrier.
