Abstract

PURPOSE: Levan sucrase is made to act on a substrate solution containing aldose and sucrose or raffinose to form aldosylfructoside and the product is used as sweetener to give food and beverage inhibiting tooth decay.
CONSTITUTION: A substrate solution is prepared by adding an aldose that can newly form other aldosylfructoside than sucrose and raffinose by the fructose rearragement caused by levan sucrase, such as D-xylose, L-arabinose, D-galactose, or the like, and together sucrose or raffinose that can donate the fructose residue in the fructose rearrangement. Then, levan sucrase, which is produced by a microorganism such as Actinomyces viscosous, is made to act on the substrate to give aldosylfructoside, which is used as a sweetener instead of sucrose that frequently causes tooth decay.
