Abstract

PURPOSE:To prepare roe-like spheres having excellent shape-retainability, water- retainability, texture, and uniformity, by chemically gelatinizing a composite sphere composed of a core consisting of a specific chemical gelatinizing agent and a sol- forming substance and a skin layer composed of a specific edible sol, from outside of the sphere. CONSTITUTION:A composite sphere composed of a core consisting of an edible sol containing a chemical gelatinizing agent and a sol-forming substance wherein said gelatinizing agent is either nonreactive with said sol-forming substance or reactive therewith provided that the fluidity of said core layer is mainained after the reaction, and a skin layer consisting of an edible sol containing a chemically gelatinizable sol-forming substance, is formed, e.g. by using a nozzle, and the skin layer is gelatinized by treating the surface of the sphere with a chemical gelatinizing agent.
