Abstract

PURPOSE: A monascus pigment is made to react with a specific nucleic acid-relating compound, e.g., adenine, guanine, in an aqueous medium to prepare said pigment suitably used to color meat, e.g., ham and sausage.
CONSTITUTION: In an aqueous medium, (A) a monascus pigment resulting from culturing a microorganism capable of producing the monascus pigment, e.g., Monascus anka IFO6540, is made to react with (B) at least one of compounds relating to nucleic acid that is selected from adenine, adenosine, deoxyadenosine, adenosinemonophosphoric acid, adenosinediphosphoric acid, cytosine, guanine, guanosine, deoxyguanosine, deoxycytidine, deoxydytidinemonophosphoric acid, cytidine, cytidinetriphosphoric acid, cytosinedeoxyribosidediphosphate, oligonucleotide and deoxyribonucleic acid.
