Abstract

PURPOSE: To remove the color of refined sake completely, and to prevetnt the color development of sake with sun light, by adsorbing and removing the coloring components of sake with chelate-type anion exchange resin and activated charcoal.
CONSTITUTION: Heavy metals such as iron of ferrichrysin which is a coloring component of sake, and Mn which catalyzes the color development with sun light, are removed by treating the sake with a chelate-type anion exchange resin; and flavin compounds, melanoidin, caramel, etc., are remobed with activated charcoal. The chelate-type anion exchange resin is pref. a phenolic chelate-type ion exchange resin having two iminodiacetic acid groups in the phenolic nucleus, to improve the decoloring and the coloration preventing effects. To prevent the pH change of the sake during the treatment, the ion exchange resin is pref. a mixture of an H-type resin and a Na-type or Ca-type resin.
