Abstract
PURPOSE: A combination of hard emulsifier and soft emulsifier is mixed with an oil that is liquid at low temperatures to form title shortening without emplyment of a frothing agent, which can be used in continuous cake mixer because it is good in cake forming properties and fluidity at low temperatures.
