炭酸ガス飽和に関する改良発明の分野
本発明は、生成物を炭酸ガス飽和をする方法及びその方法により製造される炭
酸ガス飽和生成物に関する。本発明は、水、ソフトドリンク及びアルコール飲料
飲料を含む飲料のような液体生成物に関連する特定の用途を見出だしたものであ
る。発明の背景
飲料のような生成物を炭酸ガス飽和する最近の方法は、圧力下で気体の二酸化
炭素で処理し、適する容器に得られた炭酸ガス飽和生成物を入れることに関する
ものである。
しかし、そのような技術は、生成物が滅菌条件下でパッケージすべきものであ
る場合(例えば、その生成物が保存剤を含まない場合)には容易に用いられるも
のではない。
現在まで、炭酸ガス飽和生成物を無菌的に充填する容器の問題に対する便利な
解決法は開示されていない。発明の概要

炭酸ガス飽和される生成物は、通常、液体形態である。従って、本発明の方法
は、炭酸ガス飽和された飲料の生成において特定の用途を見出だしたことである
。
一般的に、炭酸ガス飽和される生成物は「瞬間殺菌」(例えば75℃で30秒間)
により滅菌される。その代わりに、その生成物の性質によって、その生成物をフ
ィルター滅菌(filter sterilise)することが可能である。二酸化炭素(CO2

である。

することができる物質は、作用物質Iと反応する場合に二酸化炭素ガスを生じる

り、作用物質IIは炭酸塩である(又はその逆でもよい)。クエン酸と炭酸アンモ
ニウムは特に適する物質であると考える。
明らかに、気体の二酸化炭素を発生することができる物質の添加後に、実質的
に気密であるように、容器を密閉する必要がある。このことは、二酸化炭素が溶
液から出ることを防ぎ、容器が滅菌条件からとり除かれたときに生成物の無菌性
を保持する。
例えば、固体の二酸化炭素を気体の二酸化炭素を発生させることができる物質
として用いる場合に気体の二酸化炭素を生成する速度が非常に速いことは当業者
に評価される。固体の二酸化炭素を生成物に添加すると、固体の二酸化炭素は昇
華し始める。しかし、その昇華の速度は、生成物中にその気体が溶解する速度よ

二酸化炭素が液体にされるときに、その液体が二酸化炭素で飽和されるまで、

込められる」。
炭酸ガス飽和された生成物における「閉じ込められた」二酸化炭素の量は、炭

いか、少ないか又はおよそ同じ量である。
生成物に溶解されたそして閉じ込められた二酸化炭素の量は、当業者によく知
られた方法によって決定される。それは、その生成物をじょう乱して(例えば生
成物を振盪して)閉じ込められた二酸化炭素を出させる(force out)ことによ

典型的には、約1.5容量の二酸化炭素を最初の炭酸ガス飽和において溶解させ

本発明を、下記の例示的な実施例によりさらに記載する。実施例
