と比較し、温水や温めた牛乳への溶解性、分散性は同等
である。これは油脂粒子の周囲を水溶性の糖類、タンパ
ク質等が囲むような構造をしていること、添加した界面
活性剤の水中油型乳化剤としての効果、また膨化しなが
ら乾燥されることにより多孔質な粒子となっているため
と考えられる。また風味においては、従来の調整ココア
で出せなかった原料チョコレートに由来するチョコレー
ト感を持ち、ココア風味との差別性が明らかである。チ
ョコレートを温水や温めた牛乳に溶解させて飲用するホ
ットチョコレートが本発明により得られた粉末チョコレ
ートにより、簡単に作ることが可能になった。
