【特許請求の範囲】[Claims] 【請求項1】 小麦粉、イースト、食塩、糖類及び水を
主成分とする原料からパン粉類を製造する方法におい
て、ストレート法における第1発酵後の生地、リミキシ
ング法における再混捏後の生地又は中種法における本捏
後の生地を圧延して帯状生地となし、これを渦巻き状に
カーリングして棒状生地とし、次いでこの棒状生地をそ
の長手方向がパン型の短手方向に平行になるように型詰
めして第2発酵を行ない、以下常法によって焼成、冷
却、粉砕することを特徴とするパン粉類の製造法。
