に示した評価基準にしたがって麺の食感を官能試験して
もらい、その平均値を採ったところ下記の表6に示す結
果を得た。また、茹で上げ後60分経過した時点で10
名のパネラーにより同様にして官能試験をしてもらって
その平均値を採ったところ下記の表6に示す結果を得
た。

よりも多い実験番号26の麺は茹で上げ後60分経過し
た時点において、オーツ粉砕物を配合せずに小麦粉のみ
から得られた実験番号24の対照例の麺および実験番号
27と28の発明例の麺に比べて、弾力性、粘性および
なめらかさのすべてが劣っており、ゆでのびを生じ品質
