温度条件に放置し,その安定性を調べた結果を表2に示
す。なお,表中Wは週を,Mは月を,Initialは
初期条件をそれぞれ意味する。

lは前記と同様の意味を表わす。

し,410nmにおける吸光度値が上昇した。また,そ
れに平行してpHは低下した。それに対してショ糖を含
有する溶液は変化を示さなかった。いずれの試料につい
ても,窒素置換した群と置換しない群の間に違いは見ら
れなかった。従って,着色反応がアミノ酸またはアミン
と糖類との反応であること,空気中の酸素による酸化反
応ではないこと,また糖として非還元糖であるショ糖を
添加した場合にはアミノ酸またはアミンとの反応は起こ
らないことが明らかとなった。
