Description
本発明は健康食品卵、更に詳細には、ω3系高
度不飽和脂肪酸を含有する健康食品卵の生産方法
に関する。
卵は栄養価が高く、バランスのとれた栄養成分
が含まれた優れた食品であるが、コレステロール
含量が高いので、その摂取量を制限しなければな
らない。そこで、近年卵中に種々の薬剤を含有せ
しめて血中コレステロールの上昇を抑制しようと
いう研究が行われ、多くの報告がなされている。
一方、天然油脂、例えばサバ、イワシ、等の多
獲性赤身魚、タラ等の多獲性白身魚及びイカ類の
魚油中に含まれているω3系高度不飽和脂肪酸が
血中コレステロールを減少させる作用を有するこ
とが報告され(例えば特開昭54−154533号参照)
て以来、これを血栓症等の治療予防剤として使用
せんとする研究が盛んになつてきた。
しかし、新鮮魚体中に含まれる油脂量には自ず
と限度があり、更に、近年、食生活の変化に伴
い、新鮮多獲性魚類の摂取量が減少する傾向にあ
る。従つて、ω3系高度不飽和脂肪酸を一般の食
生活から摂取することは困難な状況にある。
一方、魚油として食用に供することは、魚臭が
著しく嗜好面での実用性に劣る。
斯かる実情において、本発明者は鋭意研究を行
つた結果、ω3系高度不飽和脂肪酸を乳化せしめ
た飲水を採卵用家禽に与えて飼育すれば、ω3系
高度不飽和脂肪酸を多量に含む卵が生産されるこ
とを見出し、本発明を完成した。
すなわち、本発明は採卵用家禽にω3系高度不
飽和脂肪酸を乳化せしめた飲水を与えて飼育して
健康食品卵を生産する方法である。
本発明方法において、飲水に配合されるω3系
高度不飽和脂肪酸は純品であつても、またこれを
含むものであつてもよいが、一般には天然油脂
(サバ、イワシ等の多獲性赤身魚、タラ等の多獲
性白身魚及びイカ類の魚油)、またはこれを常法
に従つてケン化したもの、あるいは更にメチルま
たはエチルエステル化したものが好ましい。魚油
または魚油エステルはそのままでは水に溶解しな
いので適宜乳化剤等にて乳化せしめることが必要
である。ここに乳化剤としては例えばグリセリン
脂肪酸エステル、蔗糖脂肪酸エステル、ソルビタ
ン脂肪酸エステル、レシチン等のo/w型乳化剤
が好適である。
ω3系高度不飽和脂肪酸の飲水中への添加量は、
ω3系高度不飽和脂肪酸として0.1〜3%になるよ
うにするのが好ましい。
このような飲水を8日間以上与えるとω3系高
度不飽和脂肪酸を多量、例えば卵黄100g当り0.5
g以上を含む卵が生産される。飲水へのω3系高
度不飽和脂肪酸配合量が0.1%未満では卵黄100g
当り0.5g以上のω3系高度不飽和脂肪酸を含む卵
が得られず、また配合量が3%を越えても卵黄中
のω3系高度不飽和脂肪酸量はこれ以上増加しな
いと共に、嗜好性が悪くなり、家禽の飲水量が減
少するので、発育や産卵率が低下し好ましくな
い。
尚、本発明の実施に当たり、上記のω3系高度
不飽和脂肪酸を乳化せしめた飲水に更にリノール
酸又は(及び)脂溶性ビタミン特にビタミンE又
は(及び)ビタミンAを配合したものを家禽に与
えて飼育すれば、ω3系高度不飽和脂肪酸の他に
リノール酸、ビタミンE、ビタミンAを含む卵を
生産せしめることができる。
ここで使用されるリノール酸はそれ自体でも又
これを含むものでもよく、例えばこの含有量の多
い大豆油、サフラワー油等の植物油が一般に使用
される。リノール酸、ビタミンE、ビタミンAの
配合量は、飲水100g中にそれぞれ1〜10g、
0.02〜1g、5千〜10万単位になるようにするの
が好ましい。
叙上の如くして本発明方法で生産される健康食
品卵は多量のω3系高度不飽和脂肪酸を含んでい
るので、これを摂取すると血中コレステロールを
低下させ、高血圧、血栓症を予防ないし治療する
ことができると共に、卵の摂取による高コレステ
ロール化を防止できる。
次に実施例を挙げて説明する。
実施例 1
水600Kgにω85乳化オイル〔エイコサペンタエ
ン酸(EPA)28.7%含有、ドコサヘキサエン酸
(DHA)51.3%含有:日本化学飼料社製〕を6Kg
添加して飲水を調製し、これを100羽の家禽に自
由給飼させて飼育し、初日及び一週毎3週間に渡
り産卵した卵について卵黄中のω3系高度不飽和
脂肪酸のDHA,EPA量について測定した。
尚、この家禽の飼育にあたつての飼料は産卵鶏
用オールマイテイ(日清製粉社製)を給飼した。
その結果、第1表で示される通り、3週間後の
卵には卵黄100g当りEPA160mg、DHA1280mgを
含む卵が生産された。

On the other hand, when used as fish oil for human consumption, it has a very fishy odor and is not practical in terms of taste. 産された。尚、参考に市販の卵を測定した結果
EPA0mg、DHA16mg、リノール酸3.2mg、ビタミ
