Description

【発明の詳細な説明】[Detailed description of the invention]

本発明は健康食品卵、更に詳細には、ω3系高
度不飽和脂肪酸を含有する健康食品卵の生産方法
に関する。 卵は栄養価が高く、バランスのとれた栄養成分
が含まれた優れた食品であるが、コレステロール
含量が高いので、その摂取量を制限しなければな
らない。そこで、近年卵中に種々の薬剤を含有せ
しめて血中コレステロールの上昇を抑制しようと
いう研究が行われ、多くの報告がなされている。 一方、天然油脂、例えばサバ、イワシ、等の多
獲性赤身魚、タラ等の多獲性白身魚及びイカ類の
魚油中に含まれているω3系高度不飽和脂肪酸が
血中コレステロールを減少させる作用を有するこ
とが報告され(例えば特開昭54−154533号参照)
て以来、これを血栓症等の治療予防剤として使用
せんとする研究が盛んになつてきた。 しかし、新鮮魚体中に含まれる油脂量には自ず
と限度があり、更に、近年、食生活の変化に伴
い、新鮮多獲性魚類の摂取量が減少する傾向にあ
る。従つて、ω3系高度不飽和脂肪酸を一般の食
生活から摂取することは困難な状況にある。 一方、魚油として食用に供することは、魚臭が
著しく嗜好面での実用性に劣る。 斯かる実情において、本発明者は鋭意研究を行
つた結果、ω3系高度不飽和脂肪酸を乳化せしめ
た飲水を採卵用家禽に与えて飼育すれば、ω3系
高度不飽和脂肪酸を多量に含む卵が生産されるこ
とを見出し、本発明を完成した。 すなわち、本発明は採卵用家禽にω3系高度不
飽和脂肪酸を乳化せしめた飲水を与えて飼育して
健康食品卵を生産する方法である。 本発明方法において、飲水に配合されるω3系
高度不飽和脂肪酸は純品であつても、またこれを
含むものであつてもよいが、一般には天然油脂
(サバ、イワシ等の多獲性赤身魚、タラ等の多獲
性白身魚及びイカ類の魚油)、またはこれを常法
に従つてケン化したもの、あるいは更にメチルま
たはエチルエステル化したものが好ましい。魚油
または魚油エステルはそのままでは水に溶解しな
いので適宜乳化剤等にて乳化せしめることが必要
である。ここに乳化剤としては例えばグリセリン
脂肪酸エステル、蔗糖脂肪酸エステル、ソルビタ
ン脂肪酸エステル、レシチン等のo/w型乳化剤
が好適である。 ω3系高度不飽和脂肪酸の飲水中への添加量は、
ω3系高度不飽和脂肪酸として0.1〜3%になるよ
うにするのが好ましい。 このような飲水を8日間以上与えるとω3系高
度不飽和脂肪酸を多量、例えば卵黄100g当り0.5
g以上を含む卵が生産される。飲水へのω3系高
度不飽和脂肪酸配合量が0.1%未満では卵黄100g
当り0.5g以上のω3系高度不飽和脂肪酸を含む卵
が得られず、また配合量が3%を越えても卵黄中
のω3系高度不飽和脂肪酸量はこれ以上増加しな
いと共に、嗜好性が悪くなり、家禽の飲水量が減
少するので、発育や産卵率が低下し好ましくな
い。 尚、本発明の実施に当たり、上記のω3系高度
不飽和脂肪酸を乳化せしめた飲水に更にリノール
酸又は(及び)脂溶性ビタミン特にビタミンE又
は(及び)ビタミンAを配合したものを家禽に与
えて飼育すれば、ω3系高度不飽和脂肪酸の他に
リノール酸、ビタミンE、ビタミンAを含む卵を
生産せしめることができる。 ここで使用されるリノール酸はそれ自体でも又
これを含むものでもよく、例えばこの含有量の多
い大豆油、サフラワー油等の植物油が一般に使用
される。リノール酸、ビタミンE、ビタミンAの
配合量は、飲水100g中にそれぞれ1〜10g、
0.02〜1g、5千〜10万単位になるようにするの
が好ましい。 叙上の如くして本発明方法で生産される健康食
品卵は多量のω3系高度不飽和脂肪酸を含んでい
るので、これを摂取すると血中コレステロールを
低下させ、高血圧、血栓症を予防ないし治療する
ことができると共に、卵の摂取による高コレステ
ロール化を防止できる。 次に実施例を挙げて説明する。 実施例 1 水600Kgにω85乳化オイル〔エイコサペンタエ
ン酸(EPA)28.7%含有、ドコサヘキサエン酸
(DHA)51.3%含有:日本化学飼料社製〕を6Kg
添加して飲水を調製し、これを100羽の家禽に自
由給飼させて飼育し、初日及び一週毎3週間に渡
り産卵した卵について卵黄中のω3系高度不飽和
脂肪酸のDHA,EPA量について測定した。 尚、この家禽の飼育にあたつての飼料は産卵鶏
用オールマイテイ(日清製粉社製)を給飼した。 その結果、第1表で示される通り、3週間後の
卵には卵黄100g当りEPA160mg、DHA1280mgを
含む卵が生産された。

Since then, there has been active research into using it as a therapeutic and preventive agent for thrombosis, etc. However, there is a natural limit to the amount of oil and fat contained in fresh fish, and furthermore, in recent years, with changes in dietary habits, the amount of fresh fish that can be caught has tended to decrease. Therefore, it is difficult to intake omega-3 polyunsaturated fatty acids from the general diet. On the other hand, when used as fish oil for human consumption, it has a very fishy odor and is not practical in terms of taste. Under these circumstances, the present inventor conducted intensive research and found that if poultry for egg collection are fed drinking water emulsified with omega-3 polyunsaturated fatty acids and raised, eggs containing a large amount of omega-3 polyunsaturated fatty acids will be produced. They discovered that it can be produced and completed the present invention. That is, the present invention is a method for producing eggs as a health food by feeding poultry for egg collection with drinking water emulsified with omega-3 polyunsaturated fatty acids. In the method of the present invention, the omega-3 polyunsaturated fatty acids added to the drinking water may be pure or contain them, but are generally natural fats and oils (highly harvested red meat such as mackerel and sardines). Preferred are fish oils, fish oils from white fish such as fish, cod, etc., and squids), saponified oils according to conventional methods, or methyl or ethyl esterified oils. In carrying out the present invention, poultry are given drinking water in which the above-mentioned omega-3 highly unsaturated fatty acids are emulsified and further mixed with linoleic acid or (and) a fat-soluble vitamin, especially vitamin E or (and) vitamin A. If bred, it is possible to produce eggs containing linoleic acid, vitamin E, and vitamin A in addition to omega-3 polyunsaturated fatty acids. The linoleic acid used here may be itself or one containing linoleic acid; for example, vegetable oils containing a large amount of linoleic acid, such as soybean oil and safflower oil, are generally used. The amount of linoleic acid, vitamin E, and vitamin A is 1 to 10 g each in 100 g of drinking water.

E5.1mg及びビタミンA4100単位以上を含む卵が生
産された。尚、参考に市販の卵を測定した結果
EPA0mg、DHA16mg、リノール酸3.2mg、ビタミ
ンE2.1mgそしてビタミンA1600単位であつた。
