り顎9を支柱2の案内溝7に通して挿入され、こ
の顎9とつながる柄10が支柱2の側面外側に位
置して握持可能となつている。この柄10の一部
は刃8の先端(図面の下側)よりも若干(約1
cm)長く突出して台盤1と当接するように形成し
てあり、万一食料品の裁断終了時に台盤1と刃8
との間に作業者等の指等身体の一部があつたとし
ても刃8が台盤1と当接せず損傷を招くことのな
いようになつている。

握持して包丁を垂直に降下させることにより、食
料品を誰もが手軽かつ確実に裁断することがで
き、しかも両手で柄を握持して降下するように構
成しているため、指先などを傷つけてしまうとい
