本考案は、屠畜場における牛屠体の皮剥ぎ作業

く付着してしまうことから、食肉としての歩留ま
りが悪いばかりでなく、枝肉の姿が悪くなつてし

題点を解消せしめ、レ−ルに吊架した状態の牛屠
体を、ナイフ、または、エアナイフを使用して手
作業で綺麗に皮剥ぎし、水平回転するレールによ
つて牛屠体を所要の角度づつ回転させながら定位
置の作業床上での作業を可能するとともに、作業
床の昇降により無理のない皮剥ぎ作業が高能率的
で、而も、商品価値を損なうことがなく、歩留ま
りのよい作業装置を提供せんとするものである。
