調理用鍋において、 前記鍋蓋は、鍋本体被覆部と、該被覆部に設け
られた鍋本体中の煮汁等を導出させるための導出
用貫通孔と、該貫通孔に取付けられ上側方に煮汁
等を排出するための排出用貫通孔を有する筒状部
と、該筒状部の周囲に配設された周壁部と、必要
に応じて配設される前記周壁部上に設けられた蓋
部と、を具備し、前記筒状部と前記周壁部間には
排出煮汁等を保持する保持室が形成されることを
特徴とする調理用鍋。 (2) 前記鍋本体は、底外壁面が凹面となつた底
壁部を有する請求項１記載の調理用鍋。 (3) 前記筒状部の上端内側は、下方に行くに従
い内径が小さくなるテーパーを有し、該テーパー
を有する上端部には圧力調整手段が摺動可能に取
付けられ、該圧力調整手段を下方へ押し下げて前
記排出用貫通孔と鍋本体内部とを遮断させること
により加圧状態が維持されつつ所定圧以上になる
と前記圧力調整手段が上方へ押し上げられ前記排
出用貫通孔と鍋本体内部とが連通することにより
加圧状態が解除されることを特徴とする請求項１
