Description
〔産業上の利用分野〕
本発明はパン、イーストドーナツ等のイースト
発酵食品の冷凍生地の製法に関する。
〔従来の技術〕
近年、イースト発酵食品の冷凍生地に関しては
パン工場等の合理化に伴ないその需要が伸びてき
ている。
通常製パン法としては代表的なものとしてスト
レート法や中種法があるが、冷凍生地を得るため
にはもつぱらストレート法の変形が採用されてい
る。その一般的な製法は小麦粉等の穀粉類にイー
スト、食塩、砂糖等の副資材および水を加えて混
〓し生地を形成した後、この生地を全く発酵させ
ないかまたは短時間発酵をさせてから分割し成型
して冷凍を行うものである。また従来用いられて
いるイーストの種類としては生イースト、ドライ
イースト、インスタントイースト等があるが、生
イーストは一般に細く砕いて添加するかまたは仕
込水の一部または全量に溶解して添加されてい
る。ドライイーストの場合はあらかじめ仕込水の
一部となる温水で前発酵をとつてから添加され
る。またインスタントイーストであればそのまま
小麦粉に混入して添加するかまたは、仕込水の一
部または全量に溶解して、添加する。このように
イーストの添加法にはイーストの種類により種々
あるがいずれも混〓開始時に添加されるものであ
る。
〔発明が解決しようとする問題点〕
しかしがらこの変形ストレート法によつて得ら
れる冷凍生地は長時間の冷凍貯蔵すると生地中の
イーストの活性が低下したり死滅したりして、そ
の結果焼成後の製品の品質が低下するという欠点
があつた。
〔問題点を解決するための手段〕
そこで本発明者は研究を重ねてイーストの添加
を混〓の過程において行うことにより容易に前記
問題点を解決できることを見出して本発明を完成
した。
したがつて本発明はイースト発酵食品の冷凍生
地の製造法の改良に係るものである。
本発明によればイースト発酵食品のイースト以
外の材料を配合しそれを混〓し、その混〓の過程
においてイーストを添加して生地を製造する。す
なわち本発明においては小麦粉等の穀粉類からな
る主材料および食塩、砂糖、脱脂乳あるいは乳脂
肪等の副材料等に水を加えて一定時間混〓する。
そして混〓をある程度行つた後に所望量のイース
トを添加してさらに混〓を続けて生地を製造しつ
いで冷凍する。この際前記副材料の一部もしくは
全部を最初に穀粉と混合することなく、混〓の任
意の段階で加えて混〓することも可能であり、ま
た製パン法はストレー法および中種法のいずれも
用いられる。生イーストおよびインスタントイー
ストはそのまま添加することができるが、ドライ
イーストは温水処理工程を必要とするのでその使
用は好ましくない。
本発明によるイーストの添加時期は例えばパン
生地の総混〓時間の30〜80%の時点が適当であ
り、これより早い時期であれば効果が少なく、ま
たこれより遅い時期であるとイーストの均一な混
合が期待できない。特に総混〓時間の60〜80%の
時点でイーストを添加するのが望ましい。
〔発明の効果〕
このようにして本発明の方法によればイースト
発酵冷凍生地を5週間以上も貯蔵可能であり、3
週間程度貯蔵した生地から製造したパンは、冷凍
することなく、材料から通常の方法で製造したパ
ンと実質的に同程度の外観、内相、触感および風
味を有しており、従来法による冷凍生地の貯蔵可
能期間が10日ないし2週間であるのに比して貯蔵
可能期間が著しく延びることは驚くべきことであ
る。
以下、本発明について、具体的に実施例に基づ
いて説明する。
