Description

【発明の詳細な説明】[Detailed description of the invention]

この発明は白米を炊飯直前に調湿して高水分の
白米とする簡易白米調湿器の改良に関する。 一般に白米の水分を多くすればするほど、炊飯
後の米飯のα化すなわち粘性が増し軟かくなる傾
向がある。したがつて白米の水分を高くするほど
日本人の嗜好にあつた粘りの強い味の良い米飯に
なる。しかし、反面、水分が高くなるほど、保存
性が落ちてくる。すなわち、水分が高くなると酸
化速度が増して、かびが生え腐敗し易くなる。 それ故に、農林省は米を買い上げるとき、検査
規格を設けて、玄米白米とも、その水分に上限を
設けている。ところがこの規制に合格するため、
農家は検査に万一にも不合格とならないよう安全
を見て低めの水分に調節するので、一般的に、検
査規格より低水分である。その上、精米過程での
発熱や風選処理のため、0.5%から1%は水分が
減少する。その結果、農林省の白米の規格より2
%から3%低いのが普通である。 近年、その対策つまり食味改善策として精米行
程の最終段階で加湿行程を設けて、白米の水分を
調整するシステムが普及しつつあるが、この場合

することが出来るわけである。 白米への加湿は、その速度が速いとヒビ割れが
生じ、折角浸漬時のヒビ割れを防止るための白米
加湿の効果を減殺してしまう。 また、下表の如く、白米の水分が高いほど炊飯
後の米飯の粘性が高く、しかもその硬さが軟かい
という特性が実験により知られている。

吊金具5を懸架装置6に掛止して吊設し、また前
記機枠1の底部に加水器7とフアン8か成る湿風
発生装置9を設け、10は前記機枠1の一側に設
けた給水用タンク、11は加水器7底部の排水
弁、12は前記フアン8を回転する電動機、13
は前記調湿槽4内に形成した白米層である。 上述の構成であるから、前記調湿槽4に所定量
の白米を供給して該装置を起動すると、前記フア
ン8の回転によつて加水器7の水面から湿風が上
昇して多孔壁3面から白米調湿槽4内に流入し、
その湿風は機枠1の内壁面に沿つて下降すると共
に、再び加水器7の水面を通つてフアン8の回転
によつて上昇する。この湿風は前記循環行程を数
回次循環して所定の高水分に前記白米を加湿し、
また前記調湿槽4は機枠1外に取出されると共
に、前記白米を直ちに炊飯して美味な良質米飯に
加工できる効果がある。 特許請求の範囲第2項のものは、前記湿風発生
装置9のフアン8が、正逆回転用電動機12Aに
連結してあるので、電動機12の正回転によつて
前記調湿槽4の多孔壁3面から流入する循環湿風
により水分添加量の少ない前記白米層13の上半
部分が、電動機12Aの逆回転によつて前記湿風
が逆方向に循環し前記白米層13の上面から下方
に流下して白米を加湿する。したがつて、電動機
12Aを適時の間隔で切換して正逆に回転するこ
とにより、前記白米層の全粒に対し斑なく均一に
加湿して加湿斑を完全し防止できる効果がある。 特許請求の範囲第3項のものは、前記白米調湿
槽4が、その重量を計測する重量計14を備えた
ものであるので、前記調湿槽4を吊架した懸架装
置6Aが上下動してその重量値の変化が重量計1
4に表示されるため、調湿前の白米の重量および
その含水率を測定しておけば、重量計14の表示
